Cinnamon & Banana Cake

gluten free, vegan, lower in histamine
recipe for 2 small cakes or 1 medium cake. 


Ingrediants

2 cups gluten free flour of your choice (works with bread-mix & all purpose flour. I used "Brot Mix" from Schär)
1 cup cane sugar (I used brown sugar)
1/2 teaspoon vanilla sugar
1 teaspoon baking powder (if you use a big cup: 1 1/2 teaspoons - don't use more than that, you don't want it to taste like baking powder, do you? ;) )
1/2 teaspoon salt
1 cup vegan milk (I used coconut milk)
1 banana
1/2 teaspoon cinnamon
3/4 cup of vegan oil (I used sunflower oil)

Instructions


  1. In a bowl, sift together all dry ingrediants.(Do not add the banana and the cinnamon here!)
  2. In a second bowl, stir together milk and oil.
  3. Slowly add the dry mixture until its all combined together
  4. Mash the banana until there are no lumps and slowly add it to the mixture. 
  5. Mix until everything is combined.
  6. In a small bowl, mix together a small amount of the batter and the cinnamon.
  7. to make sure your cake won't stick after baking, spread some oil into the pan.
  8. Alternately, put the two dough-parts into your baking pan.(as shown in the photo)
  9. Put into the oven: 45 to 50 minutes - 180°C
  10. After 45 minutes try to stick in a toothpick. If it comes out clean, the cake is finished.
  11. Let it cool and enjoy!
Note: The dough will rise. Make sure to not over-fill the pan. (3/4 of the pan-height should be alright)
For a better taste (and if it ended up too dry), melt some dark (vegan) chocolate, mix it with some oil/vegan butter and place it on top. Tastes also good with jam/marmelade, mashed banana.
